Marination for the meat (important)

#1. Scrape green papaya skin and spread/mix it over the mutton.

#2. Add some garlic + ginger + salt + yogurt mix (yogurt is optional)

#3. leave overnight

Method

#0. Pressure cook the marinaded meat+a bit of water – 10 whistles :) now this might vary depending on the quality of the meat. Just make sure the meat is well tenderized here.

#1. Heat white oil, flavor it with 2/3 cloves of garlic (crush with the flat side of your knife) and a couple of bayleaves.

#2. Add the chopped onion + salt (fry till brown)

#3. Add tomatoes – fry till tomatoes soften up and mix totally

#4. Add the marinated mutton

#5. Fry till mutton starts becoming brown and oil separates

#6. Add tumeric, Ginger, red chilli (whole), salt and a tea spoon of sugar

#7. Mix = Blend 3/4 cloves of garlic + garam masala + nutmeg + mace + sajeerey + samorich + half cup of water.

#8. Add the mix to the meat. Check salt.

#9. Add the (almost done) potatoes. pressure cook the potatoes in the juice left in the cooker from the meat earlier. Add the juice as well to the meat.

#10. Simmer with closed lid – till oil separates and meat soft.
